The Clover Club cocktail is a classic drink that can be traced back to Philadelphia’s Bellevue-Stratford Hotel in the late 1800s. This bright, fruity pre-Prohibition sour cocktail has had a resurgence in popularity in recent years and even shares it's name with a popular cocktail bar in Brooklyn, New York. 

This pink drink is a striking one in both appearance and flavor. The raspberry syrup gives the drink a beautiful color which is topped with a creamy egg white foam.  The bold, bright taste of lemon, raspberry, and gin pack each sip with lots of sweet-tart flavor. While the egg white gives a lovely mouthfeel. 

The Clover Club is a classic cocktail that truly has it all and everybody should give one a try! It's a gin cocktail recipe that is guaranteed to impress gin lovers and non-gin lovers alike.

Ingredient Notes

You will need only a few simple ingredients to mix up this Clover Club cocktail recipe. The drink was originally made with grenadine (pomegranate syrup) but today is more commonly made with raspberry simple syrup.

  • Gin - You can use any high-quality gin to make a good Clover Club, but a London dry gin is our recommendation. It will best complement the cocktail’s tart fruit and silky body.
  • Raspberry syrup -  Raspberry syrup is like a classic simple syrup but with the inclusion of raspberries. You can use homemade raspberry syrup or buy it at the store. 
  • Lemon juice - The tartness of the lemon juice pairs perfectly with the gin and raspberries. Freshly squeezed lemon juice is always best when it comes to making cocktails.
  • Egg white - To give this cocktail its iconic silky finish, egg white is added to the cocktail shaker to create a beautiful frothy texture. You can substitute the egg white for aquafaba (chickpea water) for a vegan alternative.

How to Make a Clover Club Cocktail

The best and traditional way to make a Clover Club is by using the dry shake technique which requires you to shake your cocktail twice.

  • STEP 1: Place all ingredients in a cocktail shaker. Shake for 20 seconds without ice.
  • STEP 2: Add ice to the cocktail shaker and shake again for 30 seconds.
  • STEP 3: Strain into a chilled coupe glass and garnish as desired. Enjoy immediately.

What is a dry shake?

Dry shaking a cocktail refers to shaking your cocktail ingredients without adding the ice first. This creates a smoother texture especially with cocktails made with egg white. Shaking the egg white gives the cocktail a meringue like texture.

  • It's all about the strain - Make sure to strain your cocktail well using a fine mesh sieve or a Hawthorne strainer. This will ensure that your cocktail is the best texture and will make sure there are no unwanted bits.
  • Use fresh ingredients - Always use fresh ingredients, such as fresh lemon juice, to get the best flavor. Avoid using bottled juice, which can have a flat taste and may contain preservatives.
  • Chilled cocktail glass - To make the cocktail extra frosty, place your cocktail glasses in the freezer 30 minutes before making your Clover Club drink. This ensures that your cocktail stays super cold and doesn't quickly come to room temperature.
  • Handle the eggs carefully - Always crack and separate the egg in a small bowl before adding it to your cocktail shaker. This will help to prevent you from accidentally adding any of the yolk (fat inhibits egg white foaming) or a piece of eggshell.

Clover Club Cocktail

  • 1 Cocktail Shaker
  • 1 Coupe Glass

Ingredients

  • 3 ounce Gin
  • 1 ounce Lemon Juice freshly squeezed
  • 1 ounce Raspberry Syrup
  • 1 Egg White
  • Ice Cubes

Instructions

  • Place gin, lemon juice, raspberry syrup and egg white in a cocktail shaker. Shake for 20 seconds without ice.
