Not only is this pumpkin coffee syrup great for homemade pumpkin spice lattes, it makes a yummy addition to fall cocktails, hot chocolate, or ice cream - and even goes great with waffles and french toast!
Ingredient Notes
This syrup recipe requires a few more ingredients than basic simple syrup, but it's totally worth it!
- Pumpkin puree - Use real pumpkin puree, not pumpkin pie filling. You can used the canned stuff from the store for ease or homemade pumpkin puree.
- Brown Sugar - This recipe can be made with light brown sugar, dark brown sugar (for more molasses flavor) or even coconut sugar. You could even replace some of the sugar with maple syrup for a richer flavor.
- Cinnamon sticks, ground nutmeg, allspice, cloves, and star anise - This combination of warm spices is what makes you think pumpkin pie. We are using whole individual spices here rather than pumpkin pie spice. As the syrup cooks, the spices will be infused into other ingredients making a delicious flavor.
- Vanilla Extract - This adds a bit of depth to the flavor along with a sweetness.
- Water - The base for all simple syrup recipes.

How to Make Pumpkin Spice Syrup
This easy recipe is made all in one pot with just a few minutes of stove time.
- STEP 1: Combine the water, sugar and pumpkin puree in a saucepan. Stir well.
- STEP 2: Add the spices and stir together.
- STEP 3: Bring to a simmer over medium heat, stirring until the sugar is dissolved. Then reduce the heat to medium-low and cook for 5-10 minutes.
- STEP 4: Remove the pot from heat and stir in the vanilla extract.
- STEP 5: Allow to cool to room temperature before pouring through a fine mesh strainer into a mason jar or airtight container for storage.
Storage
Store pumpkin spice syrup in an airtight container in the refrigerator for up to 2 weeks. Shake well before using.

Homemade Pumpkin Spice Syrup

Ingredients
- 1 Cup Water
- ⅔ Cup Light Brown Sugar
- ⅓ Cup Pumpkin Puree not pumpkin pie filling
- 2 Cinnamon Sticks
- 1 teaspoon Allspice Berries
- 4-6 Whole Cloves
- ¼ teaspoon Ground Nutmeg
- 3 Star Anise optional
- 1 teaspoon Vanilla Extract
Instructions
- Add the water, brown sugar and pumpkin puree to a small saucepan. Stir well.1 Cup Water, ⅔ Cup Light Brown Sugar, ⅓ Cup Pumpkin Puree
- Add in the cinnamon sticks, allspice, cloves, nutmeg and star anise. Stir again.2 Cinnamon Sticks, 1 teaspoon Allspice Berries, 4-6 Whole Cloves, ¼ teaspoon Ground Nutmeg, 3 Star Anise
- Place the saucepan over medium heat and bring to a simmer. Stir occasionally until the sugar is dissolved. Then reduce the heat to medium-low and allow to simmer for 5-10 minutes.
- Remove the saucepan from heat and stir in the vanilla.1 teaspoon Vanilla Extract
- Allow the pumpkin syrup to cool completely before transferring to an airtight container.

Can't wait to try this. In the pictures used, there is star anise both in the picture of the ingredients and in the pot. Is it supposed to be in the recipe as well or was it used as an aesthetic in the pictures?
